Apple Berry Baked Oatmeal Pie
Delicious for breakfast, snack or dessert, oatmeal is healthy and inspiring. Try this new version with oatmeal in a pie. Hassayampa Inn in Prescott gave the Historical League a wonderful recipe for yogurt parfait with granola found in Tastes & Treasures cookbook.
Apple Berry Baked Oatmeal Pie
Ingredients:
Canola oil cooking spray
2 cups frozen mixed berries
2 cups rolled oats
1/2 cup chopped pecans
1 teaspoon baking powder
1/2 teaspoon fine sea salt
1 organic apple, peeled, cored and grated (about 1 cup)
1 cup 2% reduced-fat milk
1/2 cup nonfat vanilla yogurt
1/3 cup maple syrup
2 teaspoons vanilla extract
1 egg plus 1 egg yolk
Directions:
Preheat oven to 375°F. Oil a (9-inch) pie pan with cooking spray; set aside. In a large bowl, stir together berries, oats, pecans, baking powder, salt and apple. In a medium bowl, whisk together milk, yogurt, syrup, vanilla, egg and yolk; stir into oat mixture. Transfer to prepared pan and bake until firm and golden brown on top, about 50 minutes. Cut into slices and serve.

Sassy Melon Salad
Sassy Melon Salad
Melons, pear and cucumber, together in one delicious yogurt salad. Like a Yogurt Parfait in a salad. We also love the recipe on page 52 of Tastes & Treasures for Yogurt Parfait from historic Hassayampa Inn in Prescott.
Ingredients:
1/2 cup fat-free vanilla yogurt
2 tsp. lime juice
2 cups diced (seedless or seeded) watermelon
1 1/2 cups diced cantaloupe
1 1/2 cups diced cucumber
1 cup diced pear
Directions:
In a blender or food processor, combine yogurt, lime juice, and 1/4 cup watermelon. Blend until smooth. In a large bowl, combine cantaloupe, cucumber, pear, and remaining 1 3/4 cups watermelon. Add yogurt mixture and toss.
MAKES 4 SERVINGS
1/4th of recipe (about 1 1/3 cups): 91 calories, 0.25g fat, 30mg sodium, 22g carbs, 2g fiber, 17g sugars, 2.5g protein -- PointsPlus® value 3*

Healthy Fruited Popsicles
Summer is coming and nothing beats the heat like frozen popsicles. The kids will love this treat and can help make the icy delights.
Another yummy fruit dish is Yogurt Parfait from The Hassayampa Inn. Recipe on page 52 in Tastes & Treasures cookbook.
Healthy Fruited Popsicles
Ingredients:
3 cups watermelon puree (seedless if possible)
1/2 cup fresh blueberries
1/2 cup chopped fresh strawberries
1 kiwi, peeled and sliced
1 peach or nectarine, diced small
handful fresh cherries, pitted and chopped
Directions:
Cut the watermelon into chunks and then puree it in a blender until smooth. Set aside.
Set out about 1 dozen popsicle molds (amount needed will vary depending on size of molds). Fill each one with the chopped fresh fruit. Then pour in the watermelon puree until each mold is full to the top. Place a popsicle stick into each one. Place into your freezer and freeze for about 6 to 8 hours.
When ready to serve, run the popsicle molds under warm water for a few seconds and then pull each one out.

Need Fresh Fruit for My Oatmeal
Fresh peaches, blueberries and bananas in Steel Cut Oatmeal. Adding yogurt is also delicious. What a great way to start the day.It's like Yogurt Parfait, page 52 in Tastes & Treasures, recipe from Hassayampa Inn but with cooked oatmeal instead of granola.
Yogurt Parfaits
2 cups fresh blueberries
2 cups fresh raspberries
2 cups granola
Strawberry yogurt
Mix the blueberries and raspberries in a bowl. Alternate layers of the berries and granola in parfait glasses or wine glasses and top with the yogurt.

Yogurt Parfait
Phoenix Bike Trails were busy this morning. We had a lovely 7 mile ride to the Adobe Restaurant at the Biltmore. Nothing like their Adobe Oatmeal/Yogurt/Fruit bowl. Yummm.
Since these are made to order, tell them to use skim milk since it normally comes with cream. And hold off on the sugar. It is very sweet already.
Tastes & Treasures cookbook has a wonderful Yogurt Parfait recipe on page 52. Just add chilled oatmeal. But skip the bowl if you make it at home. Much prettier to layer in a tall parfait glass like Hassayampa Inn in Prescott does.

Hassayampa Inn Breakfast Parfait
Yogurt Parfaits from historic Hassayampa Hotel in Prescott, AZ found on pg 52 Tastes & Treasures2 cups fresh blueberries
2 cups fresh raspberries
2 cups granola
Strawberry yogurt
Mix the blueberries and raspberries in a bowl. Alternate layers of the berries and granola in parfait glasses or wine glasses and top with the yogurt.
Note: You can use homemade or commercial granola and low-fat yogurt in this recipe.We varied it with bananas and strawberries.

Love this recipe but here's a new version with my favorite breakfast food- Oatmeal.

"Oats, known scientifically as Avena sativa, are a hardy cereal grain able to withstand poor soil conditions in which other crops are unable to thrive. Oats gain part of their distinctive flavor from the roasting process that they undergo after being harvested and cleaned. Although oats are then hulled, this process does not strip away their bran and germ allowing them to retain a concentrated source of their fiber and nutrients. . . [Old-fashioned oats] have a flatter shape [than other oats] that is the result of their being steamed and then rolled."
HungryGirl.com has a wonderful low calorie Oatmeal Parfait. We love the flavor.
Ingredients:
Oatmeal
1/3 cup old-fashioned oats
3/4 cup Unsweetened Vanilla Almond Breeze
1 no-calorie sweetener packet (like Splenda or Truvia)
1/8 tsp. cinnamon
1/8 tsp. vanilla extract
Dash salt
Parfait
1/2 cup fat-free vanilla yogurt with about 100 calories per 6-oz. serving
1/2 cup sliced strawberries
1/2 banana, sliced
Directions:
Combine all ingredients for oatmeal in a small nonstick pot on the stove. Add 3/4 cup water and mix well. Bring to a boil, and then reduce to a simmer. Cook for about 9 minutes, stirring often, until somewhat thick and creamy. (It will thicken more upon chilling.) Allow to cool slightly. Transfer to a bowl, cover, and refrigerate until chilled, at least 1 1/2 hours.
Stir oatmeal thoroughly until uniform in texture. Spoon half of the oatmeal into a tall glass, and top with 1/4 cup yogurt, 1/4 cup sliced strawberries, and half of the banana slices. Repeat with remaining oatmeal, yogurt, strawberries, and banana.
PER SERVING (entire recipe): 285 calories, 4.5g fat, 359mg sodium, 54g carbs, 6.5g fiber, 21.5g sugars, 9g protein -- PointsPlus™ value 7*

Yogurt Smoothie


Refrigerator leftovers . . . what do you do with them? We were leaving our condo in Eleuthera and decided to use up what was left. The condo had a "state of the art" blender so we put in yogurt, milk, blueberries, flax seed, ice, banana and a little oatmeal from breakfast. It looked wonderful until we twisted the blender from it's base. Unfortunately, this was the kind you twist to remove the bottom . . . whoosh. Yogurt Smoothie all over the counter and floor. We saved some of it and I got a few pictures to remember the laughs. It tasted pretty good, except for the oatmeal. Note to self: Remember not to add oatmeal next time.
The Hassayampa Inn has an easy Yogurt Parfait recipe pg 52 from the cookbook. No blender involved so no spills.
