John Wayne Penthouse at Francisco Grande hotel





When they heard that John Wayne had often stayed at the Francisco Grande hotel, Karen Swanson and Ruth McLeod decided to investigate. The front desk was most helpful and gave them the key. Check out the lovely views and comfortable spaces that the Duke had when he came to Arizona. 1,000 acres of his Red River Ranch were sold to Shamrock Dairy Farms so they could grow their farm, moving from Phoenix to the Casa Grande area. Lunch at Francisco Grande was included in the Shamrock Farms Historical League tour. Judy Blackwell did a wonderful job organizing such an informative trip.

Green Chile Egg Bake

Simple and easy with a little kick of green chile, this egg breakfast bake was a hit for our girls get-away weekend.

Egg and Green Chile Breakfast Casserole

Ingredients:
12 oz. bulk pork sausage
2 (4 oz.) cans chopped green chiles
6 eggs
6 tablespoons milk
2 cups (8 oz.) shredded Cheddar cheese

Directions:
Brown the sausage in a skillet, stirring until crumbly; drain.
Pour the chiles into a greased 9x13 inch baking dish.
Whisk the eggs and milk together in a bowl.
Pour over the chiles.
Sprinkle with the sausage and cheese.
Bake at 350 degrees for 30-35 minutes or until bubbly.
Yield: 6 servings

Flatbread appetizer from Karen Swanson

Culinary talents must run in the family since Karen Swanson is a wonderful cook and her son, Ryan, is a fabulous chef at the 5 star Wildhorse Pass resort restaurant Kai. These flatbread appetizers were amazing.
Karen served them at a planning meeting for Evening Under the Stars at the David Wright House, April 9.

Flatbread with Carmelized-Onions and Cheese

Ingredients:
3 large onions, chopped
2 tbsp olive oil
1 tbsp brown sugar
2 tsp balsamic vinegar
salt and pepper to taste
14 oz pkg frozen puff pastry
6 oz brie (rind removed) diced
6 oz mild blue cheese, crumbled
2 tbsp chopped fresh parsley

Directions: Heat oil in large deep frying pan on medium-high, add onions. Cook until wilted and starting to brown, about 10 minutes. Add sugar, vinegar, salt and pepper. Reduce heat to medium-low. Cook for 15-25 minutes, until onions are caramelized and golden. Cool. Puff pastry package has two pouches. Pinch both together and roll out to a 12 “ X 16” rectangle. Place pastry on baking sheet lined with parchment paper. Spread onions over pastry. Dot with cheese. Sprinkle with parsley and refrigerate if not baking immediately.
Bake in preheated 400 degree oven for 20-25 minutes, until cheese is melted and pastry is crisp. Cool for 5 minutes. Cut into 20 squares. Cut square in half diagonally to make 40 triangles.

Staff Appreciation Luncheon

Catered by our newest addition to the AHS Museum, Dancing Chef Mark Vanek, the staff enjoyed a lovely luncheon and were very grateful to be recognized.

Karen Swanson attended as the Historical League representative taking these photos and commenting, "They are all very passionate and proud of the museum."

She also reported that, "Mark added several extra dishes 'because that is what Chefs do'.  So the staff were treated well with lots of food.  Included on the buffet: 2 different wraps (Tuna & Vegetarian), tortellini soup, lettuce boats w/pinto bean hummus, mozzarella salad w/tomatoes, chips, dessert tray, a Carrot Cake and Prickly Pear Juice and Raspberry Lemonade."

Leaders of the Historical League

With President Margaret Baker at the helm, the Board of Directors has met several times already to work on the coming Historical League year 2015-2016. They are serious about their job.
Along with Margaret, we are grateful for the dedication of President-Elect Anne Lupica, Secretary Judy Blackwell, Treasurer Nancy Knight, Membership Karen Swanson, Advisors Zona Lorig, Nancy Evans and Kay Holcombe.

Ten new members attend December meeting

Karen Swanson's Pear Salad

The Historical League March meeting began with a delicious luncheon. Thanks to so many League members who prepared mouth-watering salads. I especially enjoyed this Pear Salad from Karen Swanson's creative genius. "I made up the recipe since I had some PearApples at Costco.  Pears and Blue Cheese are a great combination."


1  Bag of Mixed Salad Greens
½ Cup Red Onion, sliced in rings
1 – 2 PearApples, cored and sliced to desired size
½ Cup Blue Cheese crumbles
½ Cup Chopped Almonds
Good Seasons – Italian Dressing

Wash and spin greens and add red onion.  When ready to serve, add the PearApples, blue cheese and almonds.  Toss with Italian Dressing.

National History Day Regional Competition at AHS Museum

A wonderful competition for ages 6th grade - high school, this program encourages students to create a research paper, exhibit, program, video or play based on the 2014 theme "Rights and Responsibilities".  What imagination and hard work went into their projects! Nancy York and Madison Barkley of the AHS Museum co-ordinate NHD across the state for the students and teachers. Pat Faur, Carolee Hess, Karen Swanson and Ruth McLeod, Historical League members, were happy to volunteer as judges March 8 for this Regional event.

We were grouped with other judges to critique the projects and nominate some to advance from the Regional level to State competition, which will be held Saturday, April 5, 2014. Best of luck to these ambitious students who could go on the National Competition in Washington D.C.

Rosie's Apple Pie

My kind of recipe . . . easy and delicious.

Karen Swanson made her Mom's Apple Pie recipe to the October Historical League meeting. It was gone very quickly!

Rosie's Apple Pie

Ingredients:
6 peeled apples (medium)
1 small package raspberry jello
1 cup sugar
1 cup flour
1/2 cup butter

Directions:
Slice apples in pie shell and sprinkle jello over apples.
Combine sugar and flour and butter. Crumble over apples.

Bake 45-60 minutes at 350 degrees.
