Boston Cream Poke Cake

Healthy? no. Easy and delicious? yes. Not everything can be "good for you."

Boston Cream Poke Cake

Ingredients:
1 (18 ounce) box yellow cake mix
2 (3 1/2 ounce) boxes instant French vanilla pudding mix
4 cups milk
1 (16 ounce) can chocolate frosting

Directions:

Make cake according to package instructions.
Mix pudding mix with milk.
Whisk until lumps are gone, about 2 minutes. Pudding should be pourable but not thin.
While cake is still warm, poke holes in cake using a wooden spoon.
Pour pudding over cake and gently press pudding into cake.
Cool cake in the refrigerator.
Remove foil from frosting.
Microwave for 10-15 seconds and stir.
Frosting should be pourable but not bubbly.
Pour over cake and spread gently.

Pumpkin Pie Cake

October means pumpkins - all shapes and sizes and in every dessert! This cake is easy and delicious. If you want pumpkin cookies, try Great Pumpkin Cookies from Historical League member Kay Holcombe in Tastes & Treasures cookbook.

Pumpkin Pie Cake
1 - 18oz can pumpkin (or fresh equivalent)
1 box yellow cake mix (2 layer size)
1 cup sugar
1/2 c. melted margarine or butter
1 - 13oz can evaporated milk (not sweetened condensed)
3/4 c. chopped pecans or walnuts or coconut
3 eggs
3 tsp cinnamon

Beat eggs and milk together; add pumpkin, sugar and cinnamon. Mix until well blended. Pour into a 9x13 greased pan. Sprinkle dry cake mix over mixture. Drizzle with melted margarine. Sprinkle with chopped nuts.
Bake at 350 degrees for 50-60 min or until done.

Serve (warm or cold) with topping or whipped cream.

Chess Bars

Delicious and easy - my kind of dessert.  I have made the Chess Bars several times and everyone always enjoys them. This recipe is super easy and yummy!

Chess Bars
Ingredients for bars:
1 (2-layer) package yellow cake mix
½ cup (1 stick) butter, softened
1 egg

Ingredients for topping:
8 ounces cream cheese, softened
1 (1-pound) package confectioners’ sugar
3 eggs

Directions:
Combine the cake mix, butter and one egg in a bowl and mix well. Press over the bottom of a 9x13-inch baking pan.

Combine the cream cheese, confectioners’ sugar and three eggs in a bowl and mix well. Pour over the cake mix mixture. Bake in a preheated 350-degree oven for 45 minutes. Remove from the oven and cool completely. Cut into squares.
Option: Sprinkle with confestioners' sugar.

Makes 2 dozen.
