HG Teriyaki Salmon Mango Wrap

Teriyaki Salmon-Mango Wrap

This yummy meal has fruit, fish and vegetables rolled up in a tortilla wrap.

Ingredients:

One 2.6-oz. pouch boneless skinless pink salmon, roughly flaked (about 1/3 cup)

1 tsp. thick teriyaki sauce/marinade

1 La Tortilla Factory Smart & Delicious Low Carb High Fiber Large Tortilla

1/2 cup chopped romaine lettuce

1/2 cup mango cut into thin strips

1/4 cup thinly sliced red onion

1/4 cup jicama cut into thin strips



Directions:

In a small bowl, combine salmon with teriyaki sauce and mix well. Set aside.


Place tortilla on a microwave-safe plate and microwave for 10 seconds, or until just warm. 

Evenly place lettuce over the bottom half of the tortilla.
Evenly top lettuce with salmon mixture, mango, onion, and jicama.


Carefully and tightly roll up tortilla over the filling from bottom to top. Secure with toothpicks, if needed.


Slice in half.

White Pizza



White Pizza makes a very impressive presentation when topped with fresh sliced tomatoes and basil. And basil is so healthy, full of Vitamin K.

Ingredients:

1 large low-fat, high-fiber, burrito-size tortilla (about 100 calories)
1/3 cup fat-free ricotta cheese
1 tbsp shredded part-skim mozzarella cheese
1/4 cup thinly sliced onion
1/4 tsp garlic powder
1/8 tsp salt
Dash black pepper
4 thin slices plum tomato
4 fresh basil leaves

Directions:
Preheat oven to 375 degrees. Put tortilla on a baking sheet sprayed lightly with nonstick spray. Bake in the oven until slightly crispy, 3 - 5 minutes per side. Leave oven on.

In a small bowl, mix ricotta cheese with mozzarella cheese. Set aside.

Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add onion and, stirring occasionally, cook until softened and slightly browned, about 5 minutes. Immediately stir onion into cheese mixture. Add garlic powder, salt, and pepper, and mix well.

Spread cheese-onion mixture evenly on top of the tortilla. Top with tomato slices and basil leaves. If you like, sprinkle with a dash of salt.

Return pizza to oven and bake until hot, about 5 minutes.

Makes 1 serving.

Lemon Bread Pudding

Cooking classes can be "hands on" at Rancho de la Osa dude ranch in Sasabe. Not only did I use the huge commercial mixer but donned latex gloves for the mixing of bread cubes and egg batter. We spooned them into individual ramekins to make a tangy, sweet dessert that looked like a muffin.
It was fascinating to watch tortillas being made. Experience is key to the production of these and nothing beats them warm and fresh off the grill.

Lemon Bread Pudding
Ingredients
1 1/2 pounds croissants or brioche torn into one inch pieces
3 cups milk
3 cups heavy cream
2 tablespoons lemon zest
9 eggs, beaten
1 1/2 teaspoon vanilla
1 teaspoon salt
3 cups white sugar
3 oz fresh lemon juice

Directions
Scald milk and cream with lemon zest. Meanwhile, beat together the eggs, sugar, lemon juice, vanilla and salt. Temper hot cream into egg mix.
Toss with diced bread. Soak until liquid has absorbed, about one hour.
Preheat oven to 300 degrees.
Scoop mixture into a large ceramic baking dish (about 3 quart size).
Place dish into a pan filled with hot water to form a water bath.
Bake covered, 45 minutes.
Remove cover and raise heat to 350 degrees for 15 minutes to crisp the top. Cool slightly and cut bread, putting into squares. Serve hot with warm Lemon Sauce.
Note: We put them into individual ramikens.

Lemon Sauce
3 eggs
1/2 cup sugar
1/2 cup fresh lemon juice
1 tablespoon grated lemon zest
2 tablespoons melted butter
Beat together eggs and sugar. Add lemon juice and zest, then add melted butter. Cook all together over a double boiler till thickened. If sauce gets too thick, whisk in a little water to thin it to pouring consistency.
