Tomato and Cucumber Salad from Farmers Market

After Kay Holcombe invited me to go to the neighborhood Farmers Market, she created this tasty Tomato and Cucumber Salad from her purchases. Simple recipes can be the best ones.

Ingredients:
tomatoes
cucumber
olive oil
vinegar
spices to taste.

Directions:
Cut up  tomato to bite size chunks. Peel cucumber and cut up into bite size chunks.
Combine olive oil and vinegar in a jar. Add spices to tastes. Splash over vegetables.

Rosemary Roasted Potatoes

The Cottage Place in Flagstaff is wonderful for fine dining. They gave us several recipes for Tastes & Treasures cookbook including this one for Roasted Red Potatoes.

Finding a fabulous selection of mini potatoes at the local Farmers Market, I couldn't resist making this delicious dish. The rosemary grows great in our Arizona climate and it's flavor works so well with vegetables. Festive and flavorful - it is perfect for New Year's Day dinner.

Ingredients:
2 pounds red potatoes, cut into wedges
1 teaspoon chopped fresh rosemary
1/4 cup olive oil
1 teaspoon salt
1/4 teaspoon freshly ground pepper

Directions:
Preheat the oven to 300 degrees. Combine the red potatoes, rosemary, olive oil, salt and pepper in a bowl and toss to coat. Place in a baking pan. Roast for 25 minutes, stirring occasionally.

Serves 4

Kale Chips from Kay Holcombe

After bicycling to the Farmers Market for fresh Kale, Kay donned her League apron to create these delicious, healthy Kale Chips.

One bunch organic kale
1 tablespoon olive oil or olive oil spray
Sea salt to taste

Rinse and pat dry kale leaves.
Remove leafy part from stem and rip into chip size pieces.
If using olive oil; put all the leaves into a bag, drizzle the olive oil into the bag, add seasonings and shake.
Arrange on cookie sheet. Or, if using olive oil spray: simply arrange kale on cookie sheet, lightly spray all the chips and season with salt.
Bake for 15 to 20 minutes.
Watch carefully that they do not burn. As soon as the edges turn brown, they are done and ready to enjoy!
